Pressure cooking is the process of preparing and cooking food under high pressure steam using water or a water-based cooking in a sealed container or tank also known as a pressure cooker. The high pressure limits the liquid to boil and such permits the cooking temperatures well above 100 degrees Celsius to be reached, providing a secure and precise heating. This process is often between half and a quarter the time for conventional boiling and is thereby extremely effective. When cooked, the steam pressure is lowered back to ambient atmospheric pressure, so that the vessel can be opened safely. Pressure cooking can be used in the process of almost any food that otherwise can be cooked in water-based liquids.
