Short history about mozzarella
Mozzarella has its origin in Italy near Naples and was
first made from milk of water buffalos. Because it was not made from sterilized
milk and because there was no such thing as refrigeration the cheese was not
fresh for long and could therefore not leave the region of where it was made.
As cheese technology, refrigeration has come to the south region, the produced
buffalo mozzarella is still found south of Naples near Battaglia and Caserta.

mozzarella for their local customers, who lines up at the factories to buy this
delicacy.
Mozzarella is one of the only cheeses in the world made from buffalo milk. However, even though this is true it is in some regions still seen as a superior product to mozzarella made from cow milk.
