Then the juice is heated slightly to inactivate the natural enzymes that will otherwise destroy the juice over a longer period of time. The storage time and temperature are also important, the cooler the juice is stored the better the vitamins are preserved.
Fruit concentrate is a form of substance that has had the majority of its base component removed. Juice concentrates is most commonly made by evaporating the water from crushed or juiced fruits. To make concentrated juice is also a way to pro-long shelf life. Basically, fruit concentrate is fruit with the water removed.
