Contrary to popular believes the popular dish Bolognese is not originally from the city of Bologna in Northern Italy. Historians generally agree that the world known Italian dish originated in Imola, a city west of Bologna, which is home to the earliest documented ragú sauce, dating from the end of the 18th century. In 1891 Pellegrino Artusi published a recipe for a ragú characterized as Bolognese in his cookbook.
