Hydrocolloid is said to be “the jiggle of your gelatin snacks and the whip in your cream”. Hydrocolloid is used in different
industries, in very different ways both when it comes to for example pharma or
food products. Hydrocolloids is used as a stabilizer, gel or thickening agent. Hydrocolloids are widely used in many food formulations to improve quality attributes and shelf-life. The two main uses are as thickening and gelling agent. When used as a thickening agent it is usually in foods as soups, gravies, salad dressings, sauces and toppings where with gelling it is usually used in products like jam, marmalade, jelly, reconstructured foods and low sugar/ calorie gels.
Short history about hydrocolloid
Hydrocolloid are a collection of polymers which is found in vegetable, animal or synthetic origin. Due to different reasons hydrocolloids are added to foods in order to produce different properties. In particular hydrocolloids are capable of affecting the viscosity, thickening and stabilization of foods.
In the pharma industry, hydrocolloids are used for example as a self-adhesive, absorbent, hydrocolloid bandage, covered with a semipermeable polyurethane film, which prevents bacteria and liquid from penetrating. When exudate from the wound is absorbed, the hydrocolloid particles in the matrix structure swell to form a gel which expands into the wound and keeps it moist.
