Short history about xantan gums
Xantan gum is said to have been discovered by Allene Rosalind Jeanes and her research team at the United States Department of Agriculture. Hereafter, it was brought into commercial production by CP Kelco under the trade name Kelzan in the early 1960´s. Xantan Gum is being highly applied in the food industry today. Xantan gum is a chemical and of a long chain of polysaccharide.
