Maple syrup is first alleged to have been discovered over 200 years ago when the first colonizers living in Canada discovered that the liquid of maple trees had a sweet flavor. The natives then developed a special technique to draw the liquid from the trees also called tapping. The floating sugar product quickly became an important ingredient in many traditional dishes prepared over wood fires.
In cooking, syrup is a thick, viscous liquid primarily consisting of sugar in water.
